Earlier in the year I visited Nathan Outlaw’s restaurant in Cornwall to give his team some tips on keeping their knives ridiculously sharp. You can catch a glimpse of me in action here.

While I was there Nathan told us about Calum, a local lobster fisherman he has worked with for over 20 years.

He told us about humanely dispatching the creatures by recreating the conditions in which they live. He told us about Calum’s approach to preserving lobster numbers in the ocean. He told us about how each part of the lobster needs to be cooked in a different way.

It was so fascinating, we returned to Cornwall and went out on the boat with Calum to capture a 2min film to share with you all.
