TOG Knife Skills Class at the pony chew valley cookery school

Bristol food hero Josh Eggleton and his sister Holly have recently transformed their Michelin star gastro-pub The Pony and Trap into 'The Pony Chew Valley' - a multipurpose restaurant, event space, vegetable garden and cookery school. Read our interview with Josh for details.

We are delighted to be sponsoring the new cookery school and the whole TOG Knives team recently took over one of the TOG Knife Skills classes there to get some top tips.

Josh started by taking us on a tour of their newly landscaped and planted gardens where we tasted herbs, flowers and veg and picked some ingredients to cook with later. Back at the cookery school, we learned how to dice and chop like a pro whilst cooking bruscetta and an amazing trout and mussels dish that we all sat down to enjoy afterwards. Plenty of booze seemed to flow and it turned out to be one of the best evenings we'd had as a team. So much fun.
